Easy Rum Balls

Ingredients

  • Servings: 24
  • 2 cups vanilla wafer crumbs
  • 2 tablespoons cocoa powder
  • 1 cup pecans (very finely ground)
  • 1 cup confectioners' sugar
  • 2 tablespoons corn syrup
  • 1/4 cup jamaican rum
  • 1/2 cup granulated sugar

Recipe

  • 1 mix vanilla wafer crumbs, cocoa, nuts and 1-cup of confectioner's sugar well.
  • 2 add the corn syrup and rum. (mix well).
  • 3 shape into 1-inch balls and roll in granulated sugar.
  • 4 put into a tightly covered tin or metal container for at least 12-hours before serving.
  • 5 (cookies keep very well for 4-5 weeks).
