Gingerbread Toast

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1/2 cup minced crystallized ginger
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cinnamon
  • 1/2 cup softened butter
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 2/3 cup blanched toasted coarsely chopped almonds
  • 2 teaspoons milk
  • sugar, for topping

Recipe

  • 1 preheat oven to 375.
  • 2 combine flour, baking powder, salt, crystallized ginger, ground ginger and cinnamon.
  • 3 in a separate bowl beat butter and sugar until fluffy. beat in vanilla and eggs. stir in the flour mixture and nuts.
  • 4 divide the dough in half and shape each half into 12x2" strips on a foil-lined baking sheet, smooth the surface.
  • 5 brush each with milk; then sprinkle wiht sugar.
  • 6 bake 18-20 minutes. remove and reduce temperature to 300.
  • 7 let strips cool on a wire rack for 15 minutes.
  • 8 place the strips on a cutting board and use a serrated knife to cut each strip crosswise on the diagonal into 1/2 in thick slices.
  • 9 place slices on the baking sheet and bake 10 minutes, turn the slices and bake 10 more minutes.
  • 10 turn off the heat and allow the toasts to cool in the oven, leaving the door slightly open.
