Light Lemon Bars

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 12
  • 1 cup flour
  • 1/4 cup powdered sugar
  • 3 ounces low-fat cream cheese
  • 1 tablespoon vegetable oil
  • 2 large eggs
  • 1/2 cup sugar
  • 1 1/2 tablespoons grated fresh lemon zest
  • 2 tablespoons flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup fresh lemon juice

Recipe

  • 1 preheat oven to 350°.
  • 2 in large bowl, stir together flour and powdered sugar.
  • 3 using a pasty cutter, cut in cream cheese and oil until crumbly.
  • 4 press mixture into bottom of an 8-inch square baking pan.
  • 5 bake 20 minutes or until light golden in color.
  • 6 in a mixing bowl, beat eggs with sugar and lemon peel until smooth.
  • 7 whisk in flour, baking powder, salt, and finally lemon juice.
  • 8 pour into the hot crust and bake 20 minutes, or until the top is golden brown and set.
