Low-cal Molasses Cookies

Ingredients
- 1/2 cup vegetable oil
- 1/4 cup molasses
- 1/4 cup sugar, plus
- 2 tablespoons sugar, divided
- 1 egg
- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
Recipe
- 1 beat oil, molasses, 1/4 cup sugar and egg.
- 2 combine flour, baking soda, cinnamon, ginger and cloves in another bowl; add to molasses mixture and mix well.
- 3 cover and refrigerate for at least 2 hours.
- 4 preheat oven to 375°f.
- 5 shape into 1 inch balls; roll in remaining sugar. place on ungreased baking sheets.
- 6 bake for 10-12 minutes or until cookies are set and surface cracks.
- 7 remove from pan and cool thoroughly on wire racks.
