No-bake Banana Peanut Butter Fudge Bars

- 1 large ripe banana
- 2/3 cup butter or 2/3 cup margarine
- 2 teaspoons vanilla extract
- 2 1/2 cups rolled oats
- 1/2 cup packed brown sugar
- 1 cup semi-sweet chocolate chips
- 1/2 cup peanut butter
Recipe
- 1 finely chopped banana (1-1/4 cups).
- 2 melt butter in large skillet over medium heat; stir in vanilla.
- 3 add oats and brown sugar.
- 4 heat and stir 5 minutes.
- 5 set aside 3/4 cup oat mixture.
- 6 press remaining oat mixture into greased 9-inch square baking pan.
- 7 sprinkle banana over crust.
- 8 melt chocolate chips and peanut butter together over low heat.
- 9 pour and spread over banana.
- 10 sprinkle with reserved oat mixture; press down lightly.
- 11 chill 2 hours before cutting.
- 12 store in refrigerator.
