Light Almond Biscotti

Ingredients

- 1/4 cup finely chopped almonds
- 1/4 cup sugar
- 2 tablespoons margarine, softened
- 4 egg whites
- 2 1/2 teaspoons almond extract
- 2 cups flour
- 2 teaspoons baking powder
- cooking spray
Recipe
- 1 preheat oven to 375°f.
- 2 place almonds in a small pan.
- 3 bake about 6 minutes or until golden brown (watch carefully).
- 4 set aside to cool.
- 5 beat margarine and sugar in a medium bowl with a electric mixer until smooth.
- 6 add egg whites and almond extract; mix well.
- 7 combine flour and baking powder in a large bowl; mix well.
- 8 stir egg mixture and almonds into flour mixture.
- 9 blend well.
- 10 spray two 9x5-inch loaf pans with cooking spray.
- 11 divide dough evenly between the 2 pans.
- 12 spread dough in pans with wet fingers.
- 13 bake 15 minutes or until knife inserted in the center comes out clean.
- 14 remove from oven.
- 15 turn on to a cutting board.
- 16 cool slightly.
- 17 once loaves are cool enough to handle cut each loaf in to 16 slices.
- 18 place slices on a baking sheet sprayed with cooking spray.
- 19 bake 5 minutes.
- 20 turn bake 5 minutes more or until golden.
- 21 serve warm or cool completely and store in air tight container.
