No Bake Cookies

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 8 tablespoons unsalted butter
  • 2 large egg yolks (save egg whites for another use)
  • 2/3 cup sugar
  • 1 lb chopped dates
  • 1 teaspoon vanilla essence
  • 1/4 teaspoon kosher salt
  • 2 cups puffed rice cereal
  • 1 cup chopped pecans
  • 3 -4 ounces sweetened flaked coconut, for rolling

Recipe

  • 1 combine the butter, egg yolks and sugar in a large saucepan.
  • 2 stir on medium flame until the butter melts.
  • 3 add the dates and continue cooking and stirring for about 5 minutes.
  • 4 (note: the dough will be difficult to stir, but do your best).
  • 5 remove from heat.
  • 6 stir in the vanilla essence, salt, puffed rice and pecans.
  • 7 roll the dough into bite-sized balls (about 1 inch in diameter).
  • 8 roll the balls in the shredded coconut to coat with the same.
  • 9 serve with a smile and enjoy!
