Oatmeal Crispies

Ingredients
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground nutmeg
- 1 cup shortening
- 2 cups sugar
- 2 eggs
- 1 cup raisins
- 3/4 cup chopped nuts
- 1 teaspoon grated lemon rind
- 1 tablespoon lemon juice
- 1 1/2 cups all-purpose flour
- 3 cups quick-cooking oatmeal
Recipe
- 1 in a large mixing bowl, combine baking soda, salt, nutmeg, and shortening. mix.
- 2 continue mixing, and slowly add 1 cup of the sugar. then add 1 of the eggs.
- 3 repeat with the 2nd cup of sugar and the 2nd egg.
- 4 add raisins, nuts, lemon rind, and lemon juice. mix.
- 5 in a separate bowl combine flour and oatmeal. mix.
- 6 slowly add flour/oatmeal mixture to first bowl while mixing.
- 7 once dough is well mixed, chill in the refrigerator for about 1 hour.
- 8 roll dough into 1-inch diameter balls. place onto a baking sheet 3 inches apart on center.
- 9 bake at 350 for 12-15 minutes, or until dough is just set in the center. cool on wire racks for about 30 minutes.
