Oatmeal Crispies

Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1 cup shortening
  • 2 cups sugar
  • 2 eggs
  • 1 cup raisins
  • 3/4 cup chopped nuts
  • 1 teaspoon grated lemon rind
  • 1 tablespoon lemon juice
  • 1 1/2 cups all-purpose flour
  • 3 cups quick-cooking oatmeal

Recipe

  • 1 in a large mixing bowl, combine baking soda, salt, nutmeg, and shortening. mix.
  • 2 continue mixing, and slowly add 1 cup of the sugar. then add 1 of the eggs.
  • 3 repeat with the 2nd cup of sugar and the 2nd egg.
  • 4 add raisins, nuts, lemon rind, and lemon juice. mix.
  • 5 in a separate bowl combine flour and oatmeal. mix.
  • 6 slowly add flour/oatmeal mixture to first bowl while mixing.
  • 7 once dough is well mixed, chill in the refrigerator for about 1 hour.
  • 8 roll dough into 1-inch diameter balls. place onto a baking sheet 3 inches apart on center.
  • 9 bake at 350 for 12-15 minutes, or until dough is just set in the center. cool on wire racks for about 30 minutes.
