Light Almond Biscotti

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • Servings: 32
  • 1/4 cup finely chopped almonds
  • 1/4 cup sugar
  • 2 tablespoons margarine, softened
  • 4 egg whites
  • 2 1/2 teaspoons almond extract
  • 2 cups flour
  • 2 teaspoons baking powder
  • cooking spray

Recipe

  • 1 preheat oven to 375°f.
  • 2 place almonds in a small pan.
  • 3 bake about 6 minutes or until golden brown (watch carefully).
  • 4 set aside to cool.
  • 5 beat margarine and sugar in a medium bowl with a electric mixer until smooth.
  • 6 add egg whites and almond extract; mix well.
  • 7 combine flour and baking powder in a large bowl; mix well.
  • 8 stir egg mixture and almonds into flour mixture.
  • 9 blend well.
  • 10 spray two 9x5-inch loaf pans with cooking spray.
  • 11 divide dough evenly between the 2 pans.
  • 12 spread dough in pans with wet fingers.
  • 13 bake 15 minutes or until knife inserted in the center comes out clean.
  • 14 remove from oven.
  • 15 turn on to a cutting board.
  • 16 cool slightly.
  • 17 once loaves are cool enough to handle cut each loaf in to 16 slices.
  • 18 place slices on a baking sheet sprayed with cooking spray.
  • 19 bake 5 minutes.
  • 20 turn bake 5 minutes more or until golden.
  • 21 serve warm or cool completely and store in air tight container.
