Light Gingerbread

Ingredients

  • Servings: 24
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground ginger
  • 1/2 cup firm unsalted butter
  • 1 cup light brown sugar
  • 3 tablespoons corn syrup
  • 1 egg, lightly beaten

Recipe

  • 1 preheat oven to 400 degrees f and grease two cookie sheets thoroughly.
  • 2 put the flour, baking powder, and ginger in a food processor.
  • 3 cut the butter into small pieces, add to the food processor, and blend until the mixture resembles breadcrumbs.
  • 4 add the sugar, syrup, and egg, and blend to a dough.
  • 5 wrap and chill for at least 30 minutes.
  • 6 roll out the mixture on a floured surface cut out rounds or squares and place on the cookie sheets.
  • 7 bake for about 12 minutes until the shapes turn golden around the edges.
  • 8 leave for 2 minutes, then transfer to a wire rack to cool.
