Larry's Brownies

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 package graham cracker, crumbled
  • 6 ounces chocolate chips
  • 1/4 teaspoon vanilla extract
  • 1 can eagle brand condensed milk

Recipe

  • 1 combine milk with chocolate chips.
  • 2 add vanilla.
  • 3 stir in graham cracker crumbs slowly.
  • 4 place in greased brownie pan.
  • 5 bake at 350 degrees until lightly browned.

Old Fashioned Potato Salad

Total Time: 1 hr 40 mins Preparation Time: 1 hr Cook Time: 40 mins

Ingredients

  • Servings: 10
  • 4 lbs red potatoes (or )
  • 3 large eggs
  • 1 teaspoon dry mustard
  • 1 red bell pepper, diced (optional)
  • 1 carrot, grated (optional)
  • 3 green onions, thinly sliced
  • 1 tablespoon salt
  • 2 teaspoons salt
  • 1 cup mayonnaise
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 3 tablespoons cider vinegar
  • 1/2 teaspoon celery seed
  • 3 stalks celery, thinly sliced
  • 10 baby dill pickles, finely chopped
  • 2 tablespoons fresh parsley, chopped

Recipe

  • 1 in large pot, cook potatoes over high heat using 1 tablespoon of salt added to just enough water to cover the potatoes. boil until tender when pierced with a knife. drain. half or quarter potatoes as desired and set aside.
  • 2 hard boil eggs and cool. peel and dice 2 of the eggs into 1/4 inch cubes. slice the 3rd egg into 1/4 inch rounds and set aside for the garnish.
  • 3 combine diced egg, mayonnaise, celery seed, mustard, 2 teaspoons of salt and black pepper in a large bowl and whisk to combine.
  • 4 add reserved potatoes to mayonnaise mixture. add celery, red pepper, carrot, pickle, green onions and chopped parsley. stir to combine.
  • 5 chill for 30 minutes or longer. garnish with paprika and reserved hardboiled egg slices.

Granny's Sugar Cookies

  • 1 cup butter, softened
  • 2 eggs
  • 3/4 cup corn oil
  • 1 teaspoon baking soda
  • 1 cup powdered sugar
  • 1 teaspoon salt
  • 1 cup sugar
  • 4 cups flour

Recipe

  • 1 preheat oven to 350 degrees. mix all ingredients together, blend well. form dough into little balls; place on ungreased cookie shees and flatten using bottom of glass that has been dipped in sugar. bake approximately 9-11 minutes or until lightly brown.

New Brunswick Chocolate Chip Cookies

  • 1/2 cup butter, softened
  • 1/2 cup crunchy peanut butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1/4 cup milk
  • 1 teaspoon cream
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 1/2 cups rolled oats
  • 1/2 cup milk chocolate chips

Recipe

  • 1 preheat oven to 350 degrees f (175 degrees c). grease cookie sheets.
  • 2 in a large bowl, cream together the butter, peanut butter, sugar and brown sugar. beat in the eggs one at a time, then stir in the milk, cream and vanilla. combine the flour, baking soda, salt and cinnamon, stir into the creamed mixture. finally, mix in the rolled oats and chocolate chips. drop by rounded spoonfuls onto the prepared cookie sheets.
  • 3 bake for 8 to 10 minutes in the preheated oven. allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Large Batch Chocolate Chip Cookies

  • 14 lbs packed brown sugar
  • 11 lbs sugar
  • 15 lbs margarine
  • 2 1/2 lbs eggs
  • 7 1/2 ounces vanilla
  • 25 lbs all-purpose flour
  • 5 1/2 ounces salt
  • 4 1/2 ounces baking soda
  • 23 lbs chocolate chips (31 bags)
  • 4 1/2 lbs nuts

Recipe

  • 1 cream sugars and margarine; blend in eggs and vanilla.
  • 2 add flour, salt and soda.
  • 3 stir in chocolate chips and nuts.
  • 4 drop in scoops onto baking sheets.
  • 5 bake at 350° for 10-12 minutes.
  • 6 alternately: scoop 2 cups of dough onto wax paper and roll into a cylinder. repeat for the rest of the dough and freeze. when ready to bake, thaw in refrigerator, remove wax paper, slice and bake.

Raisin Cinnamon Or Chocolate Chip Cookies

  • 1 egg
  • 1/2 cup butter or 1/2 cup other soft shortening
  • 1 cup light brown sugar
  • 1 teaspoon vanilla
  • 2 tablespoons water
  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup raisins
  • 6 ounces semi-sweet chocolate bits

Recipe

  • 1 set oven to 375.
  • 2 in a small bowl break a egg in a bowl beat with a rotary beater. beat until light and foamy. set aside.
  • 3 in a large bowl measure shortening.
  • 4 pack the brown sugar in a measuring cup and dump into shortening. then cream together.
  • 5 pour the beaten egg onto creamed mixture. add vanilla and water.
  • 6 beat the mixture with a mixing spoon. beat until you have smooth, creamy batter. set aside.
  • 7 measure the flour, the baking soda, and the salt into a sifter. sift them into a bowl.
  • 8 pour about half the sifted ingredients onto the creamed mixture. stir. then pour the other half inches stir until all the flour is blended into the batter. you have a batter that can be used to make two different kinds of cookies.
  • 9 if you are making raisin cinnamon cookies, do this now: measure the cinnamon and sprinkle it over the batter. stir it inches then dump in the raisins, and stir them into the batter.
  • 10 if you are making chocolate chip cookies, do this now: dump in the package of semisweet chocolate bits. (do not put in any cinnamon). stir the chocolate bits into the batter.
  • 11 shape and bake the cookies: use an "eating" teaspoon. one full teaspoon of batter makes one cookie. dip the spoon into the batter and push the batter off onto the greased cookie sheet. these cookies will get bigger in the oven, so leave plenty of room around each cookie.
  • 12 put the cookie sheet into the hot oven. the cookies should be ready in 12 minutes. (if you have another cookie sheet, get another batch ready for the oven now).
  • 13 when the cookies come out of the oven lift them off the cookie sheet with a spatula and set them on a wire rack to cool.
  • 14 the next time you try this recipe, you may want to divide the dough in half after step 7 and make half raisin cinnamon cookies and half chocolate chip cookies. use half the amount of raisins, cinnamon, and chocolate bits.

Mom's Sugar And Spice Cutouts

Ingredients

  • 2/3 cup unsalted butter (no substitutions)
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 4 cups cake flour, sifted
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon ginger
  • 1 teaspoon nutmeg
  • 1 1/2 teaspoons cinnamon
  • 4 teaspoons milk (low-fat is fine)

Recipe

  • 1 cream together the butter and sugar and beat until light and fluffy.
  • 2 add eggs and vanilla to the butter mixture and mix well.
  • 3 sift together dry ingredients and spices. add this to the creamed mixture alternately with the milk until it forms a stiff dough.
  • 4 form into a log and wrap in wax paper. chill for a minimum of 2 hours to overnight.
  • 5 dust rolling mat with a bit of cake flour and take a portion of the dough log and roll out to 1/4 inch thickness. using the cookie cutter design of your choice, cut out cookies and place on a lightly greased (or use parchment paper) baking tray.
  • 6 bake at 375f for 8-10 minutes. allow to cool 5 minutes before removing to a cooling rack to cool completely.
  • 7 optional - lightly frost or ice the cookies to your liking. i also love these cookies just as is so the spices shine through.
