Pariserwafier (swedish Creme Wafer)

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • 1 cup butter, softened
  • 2 cups flour
  • 1/3 cup whipping cream
  • 1/4 cup butter
  • 3/4 cup powdered sugar
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 1 drop red food coloring

Recipe

  • 1 mix cookie ingredients together, chill dough.
  • 2 roll dough 1/8-inch thick.
  • 3 cut out 1 1/2 inch circles.
  • 4 transfer to sugar covered wax paper.
  • 5 coat both sides.
  • 6 prick cookies with a fork.
  • 7 bake on ungreased cookie sheet 7 to 9 minutes at 350 degrees.
  • 8 mix together ingredients for filling during this time, and when cookies are cooled place filling between 2 cookies.

Mary's Frosted Creams

Ingredients

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 2 egg yolks
  • 1 cup molasses
  • 1 teaspoon baking soda
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1/2 cup boiling water
  • flour, enough to make stiff batter
  • 1/2 cup sugar
  • 2 tablespoons water
  • 1/4 cup karo
  • 1 teaspoon vanilla

Recipe

  • 1 seperate the egg whites from yolks you will need both in this recipe.
  • 2 cream shortening and sugar together. add egg yolks, mix well.
  • 3 add enough flour to make a stiff batter. then add remaining ingredients and mix well.
  • 4 pour in a greased jelly roll pan(deep cookie pan) and bake at 350 degrees for 30 minute.
  • 5 to make frosting: beat the egg whites till fluffy, set aside. stir water and karo syrup in sauce pan and cook until it reaches soft ball stage, approx 7 minute pour over the egg whites beating all the time. until it is light and fluff then beat in the vanilla.

  • 1/4 cup butter, softened
  • 1/4 cup firmly packed brown sugar
  • 1 egg
  • 1/4 teaspoon vanilla extract

Mom's Pie Crust Cookies

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 5 1/2-6 cups flour (depends on the weather)
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup shortening (do not use butter, i use lard) or 1 cup lard (do not use butter, i use lard)
  • 1 cup milk
  • 2 eggs, well beaten
  • 1 teaspoon vanilla

Recipe

  • 1 mix all dry in a large bowl.
  • 2 cut shortening into dry till fine and crumbly (use your hands for this).
  • 3 mix all wet together and add to dry. mix with wooden spoon till dough forms. dough will be soft.
  • 4 roll out on well floured surface (i use equal parts flour and sugar) to 1/4 inch thick. cut into shapes.
  • 5 place on lightly greased sheet and bake at 350°f for 8-10 minutes. do not let cookie bottoms brown at all.

Macadamia Chocolate Brownies With Chocolate

Ingredients

  • 140 g unsalted butter
  • 4 large eggs
  • 350 g caster sugar
  • 140 g plain flour
  • 75 g cocoa
  • 100 g macadamia nuts or 100 g pecans, are also nice
  • 100 g chocolate, chopped into rough chunks

Recipe

  • 1 prehaet oven to 325°f/170°c/gas 3 and fully foil line and grease a 9inch baking tin.
  • 2 in a saucepan melt the butter over very gentle heat and set aside to cool.
  • 3 in a bowl beat the eggs with the sugar until smoth and creamy.
  • 4 stir the mixture into the cooled butter.
  • 5 in a large bowl combine sifted flour and cocoa.
  • 6 slowly stir in the egg mix until smooth.
  • 7 add the nuts and chocolate pieces and fold into the dough.
  • 8 pour the dough into your prepared tin and bake for 30 to 35 minutes.
  • 9 allow to cool for about 5 minutes and lift the the cake out of its tin using the foil to help.
  • 10 allow to fully cool before removing the foil and cutting it into 16 pieces.

Peanut Butter Nut Rice Crispy Treats

Ingredients

  • 5 cups crumbled rice cakes or 4 cups puffed rice cereal
  • 1 cup peanut butter
  • 1 cup brown rice syrup (lundberg sweet dreams)
  • 1 cup sliced almonds

Recipe

  • 1 whisk the peanut butter and rice syrup in a sauce pan on moderate-low heat to the point of boiling.
  • 2 in a large bowl, mix the rice cakes or cereal and almonds.
  • 3 coat the crumbles with rice syrup and peanut butter mixture.
  • 4 spray a square baking dish with non-stick spray and press the crumbles mixture into the pan.

Nutty Chocolate Chip Biscotti

Ingredients

  • 18 ounces roll refrigerated chocolate chip cookie dough
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon rum extract
  • 1 1/2 cups almonds, toasted, chopped
  • 1 cup semi-sweet chocolate chips

Recipe

  • 1 preheat oven to 350 degrees f & grease & flour a large cookie sheet.
  • 2 in large bowl, break up cookie dough.
  • 3 sprinkle vanilla & rum extract over dough & mix well.
  • 4 stir toasted almonds into dough.
  • 5 divide dough into 4 equal portions, shaping each into an 8"x1" log.
  • 6 place logs 3 inches apart on prepared cookie sheet, then flatten each to about 1 1/2 inches wide.
  • 7 bake 15-20 minutes or until golden brown, then cool for 15 minutes.
  • 8 reduce oven temperature to 200 degrees f.
  • 9 with serrated knife, cut each log into 10 slices, then place slices, cut side down on the same cookie sheet.
  • 10 return to oven & bake another 45 minutes to 1 hour, depending on how crisp you want the biscotti to be.
  • 11 remove from cookie sheet & cool completely, about 20 minutes.
  • 12 meanwhile, place chocolate chips in small microwavable bowl & microwave on high for 1 minute.
  • 13 stir, then microwave an additional minute, stirring every 15 seconds.
  • 14 when chips are melted, dip about 1/4 of one end of each biscotti into melted chocolate, then set each on a waxed-paper-covered cookie sheet.
  • 15 refrigerate at least 10 minutes to set the chocolate before storing in an airtight container.

  • 1 set oven to 180c.
  • 2 sift flour& soda together, set aside.
  • 3 cream butter& sugars together until light& fluffy.

  • 1 in lg saucepan, mix sugar, margarine, and milk; bring to a full, rolling boil over med heat. (full, rolling boil = large bubbles rising to surface that can't be stirred down).

  • 1 egg
  • 1/2 cup crisco
  • 1 cup light brown sugar or 1 cup dark brown sugar
  • 1/4 cup buttermilk
  • 2 cups flour, sifted
  • 1/2 teaspoon baking soda
  • 1 cup pecans, chopped
  • 1 cup cherries, chopped
  • 1 cup dates, chopped

Recipe

  • 1 mix first 4 ingredients, then add dry ingredients.
  • 2 mix the fruits together and add a small amount of flour to the fruits.
  • 3 add fruits and nuts to the dry ingredients.
  • 4 chill for about 1 hr., or overnight.
  • 5 drop by spoonfuls on a lightly greased cookie sheet.
  • 6 bake 10-12 mins., in a 400 degree oven. do not overbake.
  • 7 put a nut or cherry on top of each cookie.

Peanut Butter Fudge Cups

Ingredients

  • 1/4 cup chunky peanut butter
  • 3 tablespoons brown sugar
  • 2 tablespoons chilled butter, cut into small pieces
  • 1 1/2 tablespoons corn syrup
  • 1 cup all-purpose flour
  • 1/8 teaspoon salt
  • 3 tablespoons cold water
  • cooking spray
  • 2/3 cup packed brown sugar

  • 2 to prepare crust, place first 4 ingredients in a large bowl; beat with a mixer at medium speed until smooth. lightly spoon 1 cup flour into a dry measuring cup; level with a knife.

  • 7 cook 3 to 4 minutes or until smooth, stirring frequently. remove from heat; stir in 2 tablespoons flour and egg until well blended. divide chocolate mixture evenly among muffin cups.
  • 8 bake at 350° for 10 minutes or until the pastry is lightly browned; cool in pan on a wire rack 5 minutes.
  • 9 run a knife around outside edges of cups. remove cups from pan; cool completely on wire rack. sprinkle with powdered sugar.

Linzer Heart Cookies

Ingredients

  • 1 1/4 cups butter, softened
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 cups ground almonds
  • 1 tablespoon baking cocoa
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 3 cups all-purpose flour
  • raspberry jam
  • confectioners' sugar

Recipe

  • 1 in a mixing bowl, cream the butter, sugar and salt. add eggs, one at a time, beating well after each addition. add the almonds, cocoa, cinnamon, nutmeg and cloves; mix well. add flour; mix well. cover and refrigerate for 1 hour or until easy to handle.
  • 2 on a lightly floured surface, roll dough to 1/8-inch thickness. cut with a floured 3-inch heart-shaped cookie cutter. cut a 1 1/2-inch heart from the center of half of the cookies.
  • 3 place 2 inches apart on ungreased baking sheets. bake at 350 degrees for 10-12 minutes or until edges are golden brown. remove to wire racks to cool.
  • 4 spread 1/2 teaspoon jam over the bottom of the solid cookies; place cutout cookies over jam. sprinkle with confectioners' sugar.

Macadamia Brownie Tart

Ingredients

  • Servings: 6
  • sifted all-purpose flour
  • 1/2 cup egg beaters egg substitute or 2 large eggs
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup margarine
  • 1 cup semi-sweet chocolate chips, melted and cooled
  • 1 1/4 cups unsalted macadamia nuts

Recipe

  • 1 preheat oven to 450°f.
  • 2 form dough into 11-inch round tart pan.
  • 3 evenly form dough around corners/edges (leave 1/4-inch from top of pan).
  • 4 refrigerate for 30 minutes.
  • 5 in large bowl, whisk together eggs, sugar, and vanilla; combine well.
  • 6 in separate bowl, whisk flour, salt, margarine; stir in the chocolate.
  • 7 combine mixtures well.
  • 8 pour into prepared, chilled tart.
  • 9 cover top of brownie tart with nuts.
  • 10 bake 10 minutes; reduce heat to 350f and continue baking until nuts and crust are golden—approximately 35 minutes.
  • 11 if tart gets *too* brown, cover with aluminum foil for remaining time.
  • 12 cool on wire rack and enjoy!

  • 1 cup sugar

  • 1/2 cup milk chocolate chips

Recipe

  • 1 preheat oven to 325°f.

Peanut Butter Heath Bar Blondies

Ingredients

  • 1 1/2 cups unsalted butter, softened
  • 1 1/2 cups smooth peanut butter
  • 2 1/2 cups sugar
  • 3 large eggs, at room temperature
  • 2 tablespoons vanilla extract
  • 3 cups self-rising flour
  • 1 cup peanut butter chips
  • 3 tablespoons heavy cream
  • 4 coarsely chopped heath candy bars
  • 1/2 cup finely chopped unsalted peanuts

Recipe

  • 1 grease and flour a 18 x 12 inch jelly roll pan.
  • 2 in a large mixing bowl, cream together the butter and peanut butter until fluffy.
  • 3 add in the sugar and beat until smooth.
  • 4 add in the eggs and vanilla; mix until well combined.
  • 5 add in the flour and beat until well mixed.
  • 6 evenly spread the batter into the jelly roll pan.
  • 7 bake at 325 degrees for 25-30 minutes or until a pick comes out with moist crumbs attached.
  • 8 let cool to room temperature.
  • 9 in a saucepan, melt the peanut butter chips and cream over medium heat, stirring until smooth.
  • 10 drizzle the mixture over the cooled blondies.
  • 11 sprinkle the chopped heath bars and peanuts on top.
  • 12 let cool to room temperature before slicing and serving.

Macadamia Chocolate Chunk Cookies

Ingredients

  • 1 cup of firmly packed brown sugar
  • 3/4 cup sugar
  • 1 cup butter, softened
  • 2 teaspoons vanilla
  • 2 eggs
  • 2 1/4 cups all-purpose flour, divided
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (8 ounce) package semisweet baking chocolate, cut into chunks
  • 1 (3 1/2 ounce) jar macadamia nuts, coarsely chopped

Recipe

  • 1 place brown sugar, sugar, butter, vanilla and eggs in mixer bowl. mix on low for 30 seconds. stop and scrape sides of bowl. beat on medium speed for one minute more, then stop and scrape bowl.
  • 2 add 1 cup of flour, cocoa powder, baking soda and salt. mix on low for 30 seconds. gradually add remaining 1 1/4 cups flour while mixing on med to med low speed.
  • 3 add chocolate chunks and nuts and stir until mixed.
  • 4 drop by rounded teaspoonfuls onto greased baking sheets about two inches apart. bake at 325 for 12-13 minutes, or until edges are set. do not overbake!
  • 5 cool on baking sheets for one minute then transfer to wire racks.

Orange Poppy Seed Biscotti

Total Time: 53 mins Preparation Time: 15 mins Cook Time: 38 mins

Ingredients

  • 2 cups unbleached flour
  • 3/4 cup sugar
  • 1/2 cup coarsely ground almonds
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon finely grated orange zest
  • 3 tablespoons poppy seeds
  • 1 egg
  • 2 egg whites
  • 1 teaspoon orange extract

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 combine the dry ingredients (flour, sugar, ground almonds, poppy seeds, baking powder and baking soda) together in a bowl.
  • 3 combine the zest, egg, egg whites and extract in a second bowl. add the dry mixture and mix well. form the dough into 2 logs each 8-9 inches long.
  • 4 place logs onto a cookie sheet lined with parchment paper. bake for 30 minutes. let cool slightly and cut diagonally into 1/2 inch slices. put cut slices soft sides down back on the cookie sheets and bake slices another 8 to 10 minutes until dry.
  • 5 cool completely and store in an airtight container.

Individual Microwave Brownies (vegan)

Total Time: 9 mins Preparation Time: 7 mins Cook Time: 2 mins

Ingredients

  • Servings: 1
  • 1/4 cup flour (i use whole wheat)
  • 1/4 cup sugar (i use organic brown)
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking powder
  • 2 tablespoons cocoa (reduce to 1 tbsp if you like)
  • 2 tablespoons milk (i use soy, water is fine too)
  • 1 tablespoon oil (see above)
  • 1 tablespoon flax seed (ground into meal or powder, optional for flax egg)
  • 3 tablespoons boiling water (optional for flax egg)

Recipe

  • 1 combine the dry ingredients in a bowl.
  • 2 make a flax egg by combining flax and boiling water. stir and let it stand until it becomes sticky and egg-like (20 - 30 sec). this is optional.
  • 3 combine the wet ingredients in a separate bowl.
  • 4 combine wet and dry ingredients.
  • 5 add to microwaveable bowl. grease bowl with oil or butter for easy clean up. pam won't work! it will make batter stick to bowl!
  • 6 scrape down sides of bowl, smooth over the top of batter. microwave for 2 - 3 minutes until it's done (high power i think, most microwaves nowadays are high power). if your microwave has a low power, you might have to microwave it longer. it's done when the center of the brownie is dry and toothpick comes out clean when inserted down the middle.

Linzer Torte Barz

  • 1 heat oven to 375.
  • 2 mix all ingredients except or preserves with a spoon until crumbly.
  • 3 press 2/3 of the mixture into the bottom of an ungreased square pan (9x9x2).
  • 4 spread with preserves then sprinkle on the remaining crumbly mixture, gently press into the preserves.
  • 5 bake for 20-25 minutes or until golden brown.

  • 1 preheat oven to 375 degrees f. in a large mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. add granulated sugar, baking powder, nutmeg, baking soda, and salt. beat mixture until combined, scraping side of bowl occasionally. beat in mascarpone cheese and egg. beat in as much of the flour as you can with the mixer. using a wooden spoon, stir in any remaining flour. divide dough in half. if necessary, cover and chill for 1 to 2 hours or until dough is easy to handle.
  • 2 on a lightly floured surface, roll half of the dough at a time to a 1/8-inch thickness. using 3-inch cookie cutters, cut out dough. if desired, cut a small hole in the top of each cookie with a straw. using hors d?oeuvre cutters, cut a small shape from the centers of half of the cookies. place whole cookies on one lightly greased cookie sheet and cutout cookies on another lightly greased cookie sheet (they may bake at different rates).

  • 1 teaspoon lemon rind, grated

  • 3 1/3 cups cake flour, unsifted (i use all purpose flour)
  • 1 teaspoon baking powder
  • 1 3/4 teaspoons cinnamon
  • 12 ounces raspberry jam (i use raspberry jelly, hate those seeds)
  • confectioners' sugar

Recipe

  • 1 beat butter and sugar until light and fluffy;.
  • 2 beat in egg, egg yolk, lemon rind and vanilla.
  • 3 stir in nuts.
  • 4 stir in flour, baking powder and cinnamon, blend well.
  • 5 wrap in wax paper, chill several hours or overnight.
  • 6 using half of dough and roll out between 2 sheets of wax paper to slightly less than 1/4 inch thickness.
  • 7 remove top sheet of wax paper, cut out circles or hearts.
  • 8 carefully, place shapes on ungreased cookie sheet.
  • 9 refrigerate scraps for second rolling.
  • 10 repeat with other half of dough, making an equal number of cookies.
  • 11 with a smaller cookie cutter (you can actually purchase linzer cookie cookie cutters in large and small sizes) cut out the centers of half the cookies.

Recipe

  • 1 sift flour, sugar, salt and baking powder together in a bowl.
  • 2 with a pastry blender or two knives, cut the butter into the flour mixture until it resembles pie crust or biscuit mix (very fine lumps).
  • 3 crack an egg into a glass, liquid measuring cup. a large egg will measure 1/4 cup. if it doesn't, add water to reach the 1/4 cup line.
  • 4 add the egg, water (if needed) and the vanilla to the flour mixture and beat the mixture well.
  • 5 fill cookie press and form cookies on ungreased cookie sheets (aluminum preferred for best heat distribution).
  • 6 bake at 375°f for 10-12 minutes or until cookies are just set or very slightly browned. check cookies at the 10 minute mark and bake 1-2 minutes longer, if needed.
