Mommy's Molasses Cookies

Total Time: 22 mins Preparation Time: 15 mins Cook Time: 7 mins

Ingredients

  • 1 cup shortening (or butter)
  • 2 eggs
  • 1/2 cup molasses
  • 2 cups granulated sugar
  • 2 teaspoons baking soda
  • 4 cups sifted flour
  • 1 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • granulated sugar (for rolling)

Recipe

  • 1 melt shortening in microwave about 1 minute on high (do not make it hot)! if you are using butter in place of the shortening, just soften it for easy blending.
  • 2 blend eggs, sugar, molasses and shortening . mix until shortening is well blended.
  • 3 add dry ingrediants. mix well.
  • 4 chill in refrigerator untill shortening sets up. (if using butter and it's a cold day outside, you can just skip this step.).
  • 5 form 1" balls with your hands and roll in a dish of granulated sugar.
  • 6 mash with palm of hand (i use the bottom of a glass) after placing on an ungreased cookie sheet. you want the cookies thick enough to create a chewy center.
  • 7 now here's the tough part. the directions say to: "bake 7-9 minute at 375 degrees. do not overbake! the trick is to figure out your oven and what is the correct baking time." but i've found that a good rule of thumb is to put the cookies into a preheated oven and just watch them. once they really puff up and don't appear to be getting any puffier, but pressing down with a finger will deflate and sink them, they are done. take them out. let them sit on the tray until cool. you should have a nice, chewy cookie, once they've cooled. if you overcook them, they will be hard and crispy.

Midnight Chocolate Brownie Bites

Ingredients

  • 1/2 cup butter, plus more
  • butter, to butter the dish
  • 1/2 lb bittersweet chocolate
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla
  • 1 tablespoon grand marnier
  • 1 1/2 teaspoons orange peel, lightly packed grated
  • 2 eggs
  • 1/4 cup cocoa (best-quality)
  • 1/4 cup flour
  • 1/8 teaspoon salt
  • 1/2 cup chocolate chips, minis

  • 1 heat the oven to 350 degrees. line an 8-inch-square baking dish with aluminum foil, leaving a 1-inch overhang. lightly butter the bottom and sides of the foil.
  • 2 melt the butter and bittersweet chocolate in a medium metal bowl set over simmering water until the mixture is smooth. stir in the brown sugar until dissolved. remove from the heat and stir in the vanilla and grand marnier, then the grated orange peel.
  • 3 whisk in the eggs, one at a time, until completely blended and the mixture is shiny and smooth; the mixture will be thickened at this point.
  • 4 sift together the cocoa, flour and salt, then stir the flour mixture into the batter until blended. fold in the mini chocolate chips.
  • 5 spoon the batter into the prepared pan, smoothing the top. bake for 35 to 40 minutes, until puffed and almost set. do not overbake. cool while still in the pan, on a wire rack.
  • 6 lift the brownies out of the pan, using the foil as a handle, and invert the brownies onto the cooling rack. gently peel off the foil, then return the brownies to their original position. cool completely. cut into 25 squares, trimming off the edges if desired.

Peanut Butter And Jelly Bars

  • 1 cup unsalted butter, room temperature, plus more for pan
  • 3 cups all-purpose flour, plus more for pan
  • 1 1/2 cups sugar
  • 2 large eggs
  • 2 1/2 cups smooth peanut butter
  • 1 1/2 teaspoons salt
  • 1 teaspoon baking powder
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups strawberry jam
  • 2/3 cup salted peanuts, roughly chopped

  • 1 heat oven to 350 degrees. grease a 9-by-13-inch pan with butter, and line the bottom with parchment paper. grease the parchment, and coat inside of pan with flour; set aside. place butter and sugar in the bowl of an electric mixer fitted with the paddle attachment. beat on medium-high speed until fluffy, about 2 minutes. on medium speed, add eggs and peanut butter; beat until combined, about 2 minutes.

Peanut Butter And Jelly Brownies

  • 1 cup firmly packed brown sugar
  • 1/2 cup crunchy peanut butter
  • 1/4 cup butter or 1/4 cup margarine, softened
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 6 semi-sweet chocolate baking squares, chopped
  • 1/2 cup strawberry jam

  • 1 preheat oven to 350°f
  • 2 beat sugar, peanut butter and butter in large bowl with electric mixer on medium speed until well blended.
  • 3 add eggs and vanilla; mix well.

Glazed Cinnamon Rolls - Bread Machine

  • 3/4 cup water, plus
  • 2 tablespoons water
  • 2 tablespoons unsalted butter, softened
  • 2 1/2 cups bread flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon bread machine yeast
  • 1/3 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar

  • 1 place water, 2 tablespoons butter, bread flour, 1/4 cup granulated sugar, salt and yeast in the bread machine and start on dough cycle.

  • 1 (15 ounce) can black beans, drained and rinsed
  • 1/2 cup agave syrup
  • 1/2 cup self-rising flour

  • 4 preheat oven to 350º. lightly spray a 8x8 baking dish with nonstick cooking spray. with a whisk attachment on an electric beater and blend all ingredients until light and fluffy. spread evenly over the top of the cooled brownies. in a microwave safe bowl, melt the 2 tbsp of chips with a 2 second spray of nonstick cooking oil. using a spoon, swirl the chocolate on top. allow it to set in the refrigerator for 20 minutes. serve and enjoy. don't forget to have seconds!

Lemony Rolled Sugar Cookies

  • 3/4 cup rice flour
  • 3/4 cup sorghum flour

  • 3/4 cup room temperature butter
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/8 teaspoon salt
  • 1 egg yolk
  • 2 cups broken rock decorative candies, crushed

Recipe

  • 1 line cookie sheets with parchment.
  • 2 beat together butter, sugar, vanilla, on low speed of mixer, until creamy and fluffy.
  • 3 add salt and flour all at once and continue beating two minutes until well blended.
  • 4 wrap and refrigerate for 30 minutes in saran wrap.
  • 5 divide dough into three equal logs, or cylinders about 1 1/4 inches in diameter.

Peanut Butter And Jam Cookies

Ingredients

  • 1/2 cup plain flour
  • 1/2 teaspoon baking powder
  • 3/4 cup creamy peanut butter
  • 3 drops vanilla essence
  • 1/4 cup unsalted butter, at room temperature
  • 3/4 cup caster sugar
  • 1/4 cup soft light brown sugar, packed
  • 1 large egg
  • strawberry jam
  • 1/4 cup icing sugar, plus
  • 2 tablespoons icing sugar
  • 1 1/2 tablespoons milk

  • 1 pre-heat the oven to 180*c/350*f. sift together the flour and baking powder and set aside.
  • 2 blend together the peanut butter and the butter with you electric hand mixer, until fluffy and well combined. add the caster sugar and the brown sugar and beat until smooth. beat in the egg and vanilla. stir in the flour mixture to combine.
  • 3 shape tbs of the dough into balls and place 2 inches apart on an ungreased baking sheet. press down a bit with your fingertips and then with your thumb, gently dent the centre of each cookie. spoon about ½ tsp of the jam into these dents. bake for about 12 minutes or until lightly golden and done. remove from the oven and pan to cool on a wire rack.
  • 4 beat together the ¼ cup of peanut butter and the icing sugar. beat in the milk a little at a time until it reaches a good consistency for piping. place into a plastic sandwich bag and squish it all down into one corner. snip of a tiny bit of the corner of the bag and pipe the frosting onto the cookies. enjoy!

Pain D'amandes - Brussels Almond Bread Cookies

  • 2 1/4 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 pinch salt

  • 6 beat the mixture with a mixing spoon. beat until you have smooth, creamy batter. set aside.
  • 7 measure the flour, the baking soda, and the salt into a sifter. sift them into a bowl.
  • 8 pour about half the sifted ingredients onto the creamed mixture. stir. then pour the other half inches stir until all the flour is blended into the batter. you have a batter that can be used to make two different kinds of cookies.
  • 9 if you are making raisin cinnamon cookies, do this now: measure the cinnamon and sprinkle it over the batter. stir it inches then dump in the raisins, and stir them into the batter.
  • 10 if you are making chocolate chip cookies, do this now: dump in the package of semisweet chocolate bits. (do not put in any cinnamon). stir the chocolate bits into the batter.
  • 11 shape and bake the cookies: use an "eating" teaspoon. one full teaspoon of batter makes one cookie. dip the spoon into the batter and push the batter off onto the greased cookie sheet. these cookies will get bigger in the oven, so leave plenty of room around each cookie.
  • 12 put the cookie sheet into the hot oven. the cookies should be ready in 12 minutes. (if you have another cookie sheet, get another batch ready for the oven now).
  • 13 when the cookies come out of the oven lift them off the cookie sheet with a spatula and set them on a wire rack to cool.
