Margarita Cookies

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 225 g butter, softened
  • 140 g caster sugar
  • 1 lime, finely grated rind of
  • 1 egg yolk, lightly beaten
  • 2 teaspoons cointreau liqueur
  • 280 g plain flour
  • 1 pinch salt
  • 140 g icing sugar
  • 2 tablespoons tequila

Recipe

  • 1 preheat the oven to 190°c line 2 baking sheets with paper.
  • 2 put the butter, sugar, and lime rind into a bowl and mix well with a wooden spoon, then beat in the egg yolk and cointreau. sift together the flour and a pinch of salt into the mixture and stir until thoroughly combined.
  • 3 scoop up tablespoons of the dough and put them on the prepared baking sheets, then flatten gently. bake for 10-15 minutes, until light golden brown. leave to cool on the baking sheets for 5-10 minutes, then using a palette knife, carefully transfer to wire racks to cool completely.
  • 4 sift the icing sugar into a bowl and stir in sufficient tequila to give the mixture the consistency of thick cream. leave the cookies on the racks and drizzle the icing over them. leave to set.

Low-fat Frosted Brownie Cupcakes

Ingredients

  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup self-raising flour
  • 1/2 cup cocoa powder
  • 1/4 cup light margarine
  • 1 1/2 cups confectioners' sugar

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 cream together sugar and eggs, then sift in flour and cocoa. put into cupcake cases (only half fill to leave room for frosting), then bake for 10-12 minutes.
  • 3 whisk icing sugar into margarine (at first it won't look like enough margarine, but it will combine), and frost the cakes when cool. enjoy!

Lavender Shortbread For Summer Berries

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • 100 g unsalted butter, softened
  • 50 g caster sugar
  • 100 g plain flour
  • 50 g rice flour
  • 1 grated lemon, zest of
  • 10 drops lavender, cooking essence
  • 1 pinch dried lavender flowers or 1 pinch fresh lavender flowers
  • sugar, to sprinkle before baking

Recipe

  • 1 beat the butter and sugar and lavender essence with an electric whisk until soft and creamy. work in the flour and rice flour, lemon rind and lavender flowers.
  • 2 press the mixture into a round 20cm/8 inch loose-based cake tin and sprinkle with a little sugar. bake at 160c/320f/gas 3 for 30-35 minutes until light golden.
  • 3 mark the shortbread into 12 wedges and then leave to cool in the tin.
  • 4 remove very carefully and serve with fresh strawberries or raspberries and whipped lavender cream.

Easiest Peanut Butter Cookies

  • 2 cups peanut butter
  • 1 cup sugar
  • 2 eggs

Recipe

  • 1 mix all ingredients together.
  • 2 roll into small balls and place on ungreased cookie sheet. flatten with fork.
  • 3 bake at 325f for 15 minutes.
  • 4 *note: these seem as if they are not done when you take them out of the oven. cookies will harden slightly as they cool.

Mimi's Sand Tarts

Ingredients

  • Servings: 15
  • 1 cup butter
  • 2 eggs
  • 2 cups sugar
  • 4 cups flour
  • sliced blanched almond

Recipe

  • 1 cream the butter and sugar together. add the eggs one at a time. add the flour.
  • 2 pack the dough into butter cartons (it usually takes 2). refrigerate for several hours.
  • 3 remove from the box and slice thinly, brush with egg and place a slice of almond in the center. place on a greased cookie sheet.
  • 4 bake at 350 degrees farenheit for 10 minutes.
  • 5 a couple of notes:.
  • 6 it's easiest to peel the box off the cookie dough.
  • 7 the cookies will be very light in color when they're done baking, like the color of light sand.

  • 1/2 cup sugar
  • 3 tablespoons margarine (i use light becel non-hydrogenated)
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/4 cups flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 3/4 cup powdered sugar
  • 3 3/8 teaspoons skim milk
  • 1/8 teaspoon vanilla (additional to taste)
  • 1 1/2 teaspoons light corn syrup

Recipe

  • 1 preheat oven to 350°f.
  • 2 beat margarine and sugar until well mixed, adding egg and vanilla as you go.
  • 3 whisk baking powder, flour, tartar, and salt in another bowl. mix bit-by-bit into egg mixture, not adding any more if the dough is too thick.
  • 4 knead dough 3-5 times on heavily floured surface until smooth and at your desired consistency.
  • 5 roll dough out on the heavily floured surface with a floured rolling pin, and cut shapes out. place them on a cookie sheet, covered in parchment paper. (don't sub the parchment paper for oil, butter, or cooking spray. bottoms will crisp).
  • 6 bake in oven for 7-10 minutes until tops of cookies have firmed, checking every few minutes to make sure they donĂ¢€™t brown (these are best light and soft).
  • 7 take out of oven and place on cooling rack.
  • 8 while cooling, mix powdered sugar and milk until smooth. beat in corn syrup and vanilla until shiny.
  • 9 add food colouring to icing if you wish, and ice the cookies once they have cooled. enjoy!

Oh My! (heavy Sigh) Peanut Butter Chocolate Chip Cookies

Ingredients

  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup peanut butter, at room temperature (calls for smooth, but you can use chunky if you prefer)
  • 3/4 cup sugar
  • 2/3 cup firmly packed light brown sugar
  • 1 large egg, at room temperature
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1/2 cup peanut butter chips
  • 1/2-1 cup chocolate chips
  • 2 tablespoons sugar

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in a large bowl, combine the flour, baking soda, baking powder and salt. set aside.
  • 3 in a large bowl, beat the butter and the peanut butter together until fluffy.
  • 4 add both sugars and beat until smooth, scraping down the sides of the bowl.
  • 5 add the egg and beat well.
  • 6 add the milk and vanilla extract.
  • 7 once that is mixed well, start adding the flour mixture slowly and beat well.
  • 8 stir in the peanut butter and chocolate chips.
  • 9 put the 2 tablespoons sugar in a bowl.
  • 10 drop cookie dough by rounded teaspoonfuls into the sugar. (i use a scoop and then roll it to make round) rolling to coat.
  • 11 place on ungreased cookie sheets leaving several inches between for expansion.
  • 12 using a fork, lightly indent top w/criss-cross pattern being careful not to overly flatten cookies.
  • 13 bake for 10-12 minutes.do not overbake. cookies may appear to be underdone, but they are not.
  • 14 remove and let sit on cookie sheets for 1 minute. (they will fall apart if you don't).
  • 15 remove to a rack and cool completely.
  • 16 store in airtight container if there are any left! ü.

  • 1/3 cup unbleached flour
  • 1/3 cup oat bran
  • 1/3 cup cocoa powder
  • 1 cup sugar
  • 1/8 teaspoon salt (optional)

  • 3 large egg whites
  • 1 teaspoon vanilla extract
  • 1/3 cup pecans, chopped (optional)

Recipe

  • 1 combine the flour, oat bran, cocoa, sugar and salt, if desired, and stir to mix well.
  • 2 add the sweet potato, egg whites, and vanilla extract, and stir to mix well.

  • 4 coat an 8-inch square pan with non-stick cooking spray.
  • 5 spread the mixture evenly in the pan and bake at 325° for about 25 minutes or until the edges are firm and the center is almost set.

  • 1/2 cup karo
  • 1/3 cup granulated sugar
  • 1 (9 ounce) jar peanut butter
  • 3 -4 cups crispy rice cereal (rice krispies)
  • 1 cup butterscotch chips
  • 1/2 cup chocolate chips

Recipe

  • 1 butter 9 x 13-inch pan.
  • 2 in large saucepan, melt syrup and sugar together until it bubbles.
  • 3 add peanut butter and heat again until mixture bubbles.
  • 4 remove from heat and stir in rice cereal (alternately, use large glass bowl in microwave).
  • 5 spread in buttered pan.

  • 1 teaspoon vanilla
  • 1 1/2 cups all-purpose flour

Recipe

  • 1 cream butter and sugar til fluffy (if you have a strong mixer you may start with softened butter).
  • 2 add egg yolks, vanilla and salt and beat well.
  • 3 gradually add flour and mix thoroughly.
  • 4 lightly beat egg whites in a separate bowl (do not add in).
  • 5 roll your dough into 3/4 inch balls and dip in egg whites and roll in your pecans.

  • 2/3 cup sugar
  • 1 egg
  • 6 teaspoons amaretto (disaronno is the only way to go here)
  • 2 1/4 cups flour
  • 1 cup powdered sugar

  • pecan halves (garnish)

Recipe

  • 1 cream butter and sugar.
  • 2 beat in egg and liquor slowly.
  • 3 add flour slowly and mix well.
  • 4 lay out saran wrap.
  • 5 place dough in center work to get dough into log shape wrap in saran wrap and work dough into a rectangular log about 2x1 inches.

  • 1 (17 1/2 ounce) package sugar cookie mix (i use betty crocker)
  • 1/2 cup butter, melted
  • 1 egg
  • 1/2 cup flour
  • 1 teaspoon almond extract
  • colored sugar sprinkle or colored sprinkles, for decoration

Recipe

  • 1 heat oven to 375°f
  • 2 in large bowl, stir cookie mix, butter, egg, flour and almond extract until soft dough forms. fit cookie press with desired template. fill cookie press with cookie dough; press cookies onto ungreased cookie sheets. decorate as desired using colored sugars and sprinkles.
  • 3 bake 6 to 8 minutes or until set. cool 1 minute; remove from cookie sheet to wire rack.

Chewy Lower-fat Brownies

Hungarian Angel Wing Fry Cookies (csoroge)

Ingredients

  • Servings: 12
  • 3 large egg yolks
  • 1 tablespoon sour cream
  • 1 tablespoon granulated sugar
  • 1 tablespoon rum or 1 tablespoon whiskey
  • 1 pinch salt
  • 1 1/2 cups all-purpose flour, sifted

Recipe

  • 1 place in the center of a bread board one cup of flour. make a dent or well in the center. add the whole yolks, sour cream, sugar, rum and salt. with a fork mix until the liquids are well combined.
  • 2 gradually work into the flour. the dough should be of the consistency of a noodle dough. knead for a few minutes to make the dough smooth.
  • 3 split the dough into 2 portions. on a lightly floured board roll out each section until paper thin.
  • 4 if you have a pie crimping wheel, use it to cut the dough into squares of 3 1/2-inches or a rectangle of 3 1/2 x 2 1/2-inches. they will have beautiful serrated edges.
  • 5 with a paring knife make three or four gashes about 2 to 2 1/2-inches evenly spaced.
  • 6 fry in a deep fat (lard preferred, crisco ok) until golden brown.
  • 7 drain on paper towel.
  • 8 sprinkle with sifted confectioners sugar.

  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 1 dash ground allspice
  • 5 tablespoons unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg
  • 2 teaspoons grated lemon rind
  • 3/4 teaspoon vanilla extract
  • 6 ounces all-purpose flour (about 1 1/3 cups)

  • 3/4 cup raisins

  • 1 preheat oven to 350.

Recipe

  • 1 in a large mixing bowl, cream butter& sugar.
  • 2 add oatmeal, corn syrup and vanilla.
  • 3 pat dough into a 13x9x3/4" cookie sheet.
  • 4 bake at 350 for 15 minutes.
  • 5 while bars are baking, melt chocolate chips and peanut butter together.
  • 6 spread chocolate/peanut butter mixture on slightly cooled dough.

Lavender Cookies

Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 cup superfine sugar
  • 1/2 teaspoon sea salt
  • 2 eggs, well beaten
  • 2 teaspoons vanilla extract
  • 1 teaspoon lavender flowers
  • 2 1/2 cups unbleached all-purpose flour

Recipe

  • 1 in a large bowl, cream the butter, sugar, and salt until fluffy.
  • 2 add the beaten eggs and vanilla. mix well.
  • 3 add in the flour and mix on low speed just until the dough is coming together.
  • 4 sprinkle in the lavender buds and fold in gently. (don't over mix).
  • 5 divide the dough into two mounds and wrap up well in plastic.
  • 6 chill in the refrigerator for one hour at least.
  • 7 preheat oven to 375 degrees.
  • 8 flour your work surface and unwrap the dough.
  • 9 take half of it out and wrap up the other half to keep chilled in the fridge while you work.
  • 10 roll out the dough with a floured rolling pin, taking care not to overwork or overstretch the tender dough.
  • 11 cut out shapes of hearts, full moons, stars and crescents.
  • 12 carefully move the cookie shapes to nonstick cookie sheets, placing them 1/2 inch apart, fitting as many as possible on each sheet.
  • 13 bake, two sheets at a time, until the cookies are golden brown, about 6-8 minutes.
  • 14 use a thin spatula to move the hot cookies to a rack to cool.
  • 15 store in an airtight container when cool.

  • 1 1/2 cups brown sugar
  • 1/4 cup sugar
  • 1 tablespoon passover vanilla sugar (optional) or 1 teaspoon vanilla extract

  • 1 cup cake crumbs
  • 1 cup potato starch
  • 1 cup chocolate chips
  • 1 cup chopped nuts

Recipe

  • 1 grease 8x10 pan, preheat the oven to 350 degrees. cream brown sugar, sugar, vanilla sugar with butter/marg. blend eggs. stir in salt, cake meal and potato starch. fold in chocolate and nuts. chill 20 minutes. put in pan and bake for about 35-40 minutes, until center is set, not jiggly. cool, then cut.

Ingredients

  • 1 cup margarine (you can use butter, i always do)
  • 1/2 cup molasses
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon baking soda, dissolved in
  • 3 tablespoons hot water
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 2 cups flour (or more as needed to make a stiff dough for rolling)
  • 1/2 cup raspberry jam

Recipe

  • 1 cream together margarine and brown sugar. beat in egg, molasses until fluffy.
  • 2 add soda with water, salt and vanilla.
  • 3 stir in eough flour to make a stiff dough for rolling.
  • 4 roll out 1/8th inch thick and cut into circles. (about 1 1/2 inches across).

  • 1 cream butter and sugar until combined in an electric mixer.
  • 2 add in eggs and molasses and mix until combined.
  • 3 sift together dry ingredients, and add to butter mixture using dough hook attachment, or by hand.

  • 6 allow dough to sit for 15 minutes, or until pliable. roll out dough in 4 portions until about 1/8 inch thick, and cut into desired shapes, rerolling scraps when appropriate.
