Lemon Meringue Square Cookies

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 16
  • 1/2 cup butter (softened)
  • 1/2 cup confectioners' sugar
  • 1 cup flour
  • 2 large egg yolks
  • 2 large egg whites
  • 1/4 cup sugar
  • 1 lemon, juice and zest of (for 2 tsp of grated lemon peel and 1 tablespoon of lemon juice)

Recipe

  • 1 cream butter.
  • 2 gradually blend in the confection sugar until light and fluffy.
  • 3 add the egg yolks.
  • 4 mix in the flour and the grated lemon peel.
  • 5 spread evenly in bottom of greased 8" square pan.
  • 6 bake 10 minutes at 350°f.
  • 7 let cool while you prepare the meringue topping.
  • 8 beat egg whites till foamy.
  • 9 gradually add the regular sugar and the lemon juice.
  • 10 beat until stiff.
  • 11 spread over baked mixture.
  • 12 bake 25 minutes longer at 350°f.
  • 13 cool and cut into bars.
