Pina Colada Spritz Cookies

Total Time: 28 mins Preparation Time: 20 mins Cook Time: 8 mins

Ingredients

  • 1/4 cup caster sugar
  • 1/4 cup brown sugar, firmly packed
  • 1 cup unsalted butter, softened
  • 1 egg
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon, zest of, finely grated
  • 1/2 teaspoon almond extract
  • 3/4 teaspoon coconut extract
  • 1/2 teaspoon salt
  • 2 1/4 cups all-purpose flour

Recipe

  • 1 preheat oven to 400 deg f.
  • 2 combine butter, caster sugar, brown sugar in a large mixer bowl.
  • 3 beat on medium speed until light and fluffy.
  • 4 add egg, mix until combined.
  • 5 add the lemon juice, zest, almond and coconut extract.
  • 6 combine well.
  • 7 mix salt with flour.
  • 8 add it to the butter mixture gradually.
  • 9 (i use a wooden spoon) put dough into cookie press.
  • 10 press cookies onto ungreased cookie sheet.
  • 11 bake for about 8 minutes.
  • 12 note: before baking, i brush cookies with egg yolk glaze, fill the middle with some pineapple jam/filling and sprinkle with some dessicated coconut.
  • 13 very delicious tropical cookies that i bake for chinese new year.
