Mint-cream Cheese Brownies

Total Time: 32 mins Preparation Time: 10 mins Cook Time: 22 mins

Ingredients

  • 1 cup sugar
  • 2/3 cup unsweetened cocoa
  • 1/3 cup flour
  • 1/2 teaspoon baking powder
  • 4 egg whites, lightly beaten
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract
  • 6 ounces fat free cream cheese
  • 3 tablespoons sugar
  • 1 tablespoon flour
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract

Recipe

  • 1 combine first 4 ingredients in a large mixing bowl; stir well.
  • 2 combine 4 egg whites and next 3 ingredients in a small bowl; add to dry ingredients, stirring well.
  • 3 spread batter in an 8-inch square pan coated with cooking spray.
  • 4 combine cream cheese and remaining ingredients in a medium bowl.
  • 5 beat at low speed of an electric mixer until smooth.
  • 6 spoon cream cheese mixture by tablespoonfuls over cocoa mixture.
  • 7 cut through cream cheese and cocoa mixtures with a knife to create a marbled effect.
  • 8 bake at 350°f for 22 minutes.
  • 9 let cool in pan.
  • 10 cut into bars.
