Frosted Almond Cookies

Ingredients
- 1/2 cup butter
- 1 lemon, rind of, grated
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup flour
- 1/3 cup ground almonds
- 2 egg whites, slightly beaten
- 1 1/4 cups sliced almonds
- powdered sugar
Recipe
- 1 cream the butter,lemon peel and suger until light and fluffy.
- 2 add the vanilla and flour, mix well. mix in the almond meal.
- 3 chill the dough for one hour.
- 4 shape dough into 48 little logs and flatten slightly. you can freeze the cookies at this point.
- 5 when ready to bake: dip each log into egg , then roll in the flaked almonds. you will probably have to squeeze the log in your fist to get the almonds. i recommend getting both hand in there, you can wash up once they are formed.
- 6 place the logs close together on a parchment lined baking sheet.
- 7 bake at 325 degrees f for 15 to 20 minutes until a light golden brown.
- 8 sift powdered sugar over the cookies while they are still warm.
