Frosted Cremes

Ingredients
- 3 egg yolks
- 1 cup brown sugar
- 1/2 cup cold water
- 1 1/2 cups butter
- 1 cup molasses (dark)
- 1 tablespoon cinnamon
- 1 tablespoon ginger
- 1 tablespoon baking soda
- 1 pinch salt
- 6 -8 cups flour
Recipe
- 1 combine egg yolks (save some of the whites), sugar, water, butter and molasses.
- 2 add about 4 cups of the flour plus the cinnamon, ginger, baking soda and salt. keep adding flour until you get a soft dough.
- 3 roll 1/4 inch thick and cut into squares (or use cookie cutters, but squares are traditional).
- 4 bake to a light brown at 350 degrees for about 11 minute
- 5 when cool, frost with egg whites (one or two that you saved) stiffened with powdered sugar. should just be a thin glaze. let dry thoroughly before putting away. these cookies freeze well.
