Frosted Cremes

Total Time: 41 mins Preparation Time: 30 mins Cook Time: 11 mins

Ingredients

  • 3 egg yolks
  • 1 cup brown sugar
  • 1/2 cup cold water
  • 1 1/2 cups butter
  • 1 cup molasses (dark)
  • 1 tablespoon cinnamon
  • 1 tablespoon ginger
  • 1 tablespoon baking soda
  • 1 pinch salt
  • 6 -8 cups flour

Recipe

  • 1 combine egg yolks (save some of the whites), sugar, water, butter and molasses.
  • 2 add about 4 cups of the flour plus the cinnamon, ginger, baking soda and salt. keep adding flour until you get a soft dough.
  • 3 roll 1/4 inch thick and cut into squares (or use cookie cutters, but squares are traditional).
  • 4 bake to a light brown at 350 degrees for about 11 minute
  • 5 when cool, frost with egg whites (one or two that you saved) stiffened with powdered sugar. should just be a thin glaze. let dry thoroughly before putting away. these cookies freeze well.
