Jumbo Pecan Date Oatmeal Cookies

Ingredients

• 1 cup butter
• 3/4 cup sugar
• 3/4 cup packed brown sugar
• 1 1/2 cups flour
• 1 teaspoon baking soda
• 1 teaspoon vanilla extract
• 1/2 teaspoon salt
• 1/2 teaspoon ground cinnamon
• 2 large eggs
• 3 cups oats
• 2 cups pitted dates, chopped
• 1 cup pecans, chopped

Recipe

• 1 beat butter and sugars at med. speed with electric mixer until light and fluffy. reduce speed to low and add flour, baking soda, vanilla, salt , cinnamon and eggs. mix just until blended, scraping bowl occasionally. with spoon, stir in oats, dates and pecans.
• 2 drop cookie dough by level 1/4 cup 3 inches apart on ungreased cookie sheets.
• 3 bake cookies for about 20 to 25 minutes in a 350°f preheated oven.
• 4 remove from sheet and cool on wire rack.
