Junior Mint Brownies

Ingredients

- 1/4 cup butter or 1/4 cup margarine
- 32 chocolate-covered mint candies (about 3 ounces)
- 1 cup flour
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 2/3 cup sugar
- 1/3 cup unsweetened cocoa
- 1 large egg
- 1 large egg
Recipe
- 1 preheat oven to 350°f.
- 2 coat bottom of an 8-inch square baking pan with cooking spray.
- 3 combine butter and mints in a 2 cup glass container; microwave at high 30 seconds or until soft.
- 4 stir until smooth; set aside.
- 5 combine flour, baking soda, and salt in a bowl, set aside.
- 6 combine sugar, cocoa, egg, and egg in a large bowl; beat at medium speed until well blended.
- 7 add mint mixture and beat well.
- 8 add flour mixture and beat at low speed just until blended.
- 9 pour batter into pan and bake at 350°f for 20 minutes or until a toothpick inserted in center comes out clean.
- 10 cool completely.
