Make-ahead Cherry Christmas Slices

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 cup butter, softened (no subsitutions)
  • 1 cup icing sugar (confectioners)
  • 1 egg
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 2 cups red and green glazed cherries, halved
  • 1 cup pecans, coarsely chopped

Recipe

  • 1 in a mixing bowl, cream the butter and sugar.
  • 2 add the egg and vanilla; beat until fluffy.
  • 3 add the flour; mix well.
  • 4 stir in cherries and pecans.
  • 5 chill the dough for 1 hour.
  • 6 shape the dough into three 10-in rolls; wrap in plastic wrap, and place in a zip-lock freezer bag.
  • 7 freeze up to 2 months.
  • 8 to bake cookies: remove the rolls from the freezer.
  • 9 cut rolls into 1/8-inch slices.
  • 10 place the cookies 1-inch apart on ungreased baking sheets.
  • 11 bake at 325 degrees for 10-12 mins, or until the edges are golden brown (don't overbake).
  • 12 remove to wire racks; cool.
