My Gingernut Biscuits/cookies

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1 cup self raising flour (5)
  • 1 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 3 tablespoons low-fat margarine (6)
  • 1 1/2 tablespoons brown sugar (1 1/2)
  • 3 teaspoons clear honey (3)

Recipe

  • 1 sieve the flour, baking soda, ginger, and cinnamon into a bowl.
  • 2 combine the margarine, brown sugar and honey in a microwave proof bowl and heat until sugar is dissolved.
  • 3 add the margarine mix to the flour mixture & combine well.
  • 4 divide into 16 pieces and roll into balls with the palms of your hands.
  • 5 place on a baking paper lined tray and flatten slightly with a fork.
  • 6 bake at 180'c/350'f for approx 15minutes.
  • 7 remove from tray and cool on a rack.
