My Great Grandmother's Peanut Butter Cookies

Ingredients

  • 2 cups shortening (crisco is best)
  • 2 cups granulated sugar
  • 2 cups packed brown sugar
  • 4 large eggs
  • 2 cups peanut butter
  • 4 teaspoons baking soda
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 6 cups all-purpose flour

Recipe

  • 1 preheat oven to 375. (my oven runs a bit hot, so i put mine at 350.).
  • 2 cream sugar, brown sugar and crisco until fluffy.
  • 3 add eggs and beat well. 'beat in peanut butter, baking soda, vanilla and salt.
  • 4 you'll have to stir in about 1/2 to 3/4 of the flour. do not use a mixer.this makes an extremely stiff dough you might have to mix in the remaining flour by hand.
  • 5 shape dough into little 1- 1 1/2 inch diameter balls.
  • 6 place on ungreased cookie sheet. use a fork and press down on the top of the balls to make a depression.
  • 7 bake for 7-9 minutes or until edges are browned. wait a few seconds before transferring cookies to cooling rack or newspaper.
