Peanutty Cranberry Bars

Ingredients
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/4 cup light brown sugar, packed
- 1 cup flour
- 1 cup quick-cooking rolled oats
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup peanut butter chips
- 1 1/2 cups cranberries
- 2/3 cup light corn syrup
- 1/2 cup water
- 1 teaspoon vanilla extract
Recipe
- 1 heat oven to 350.
- 2 greese 8-inch baking pan.
- 3 beat butter and sugars in a bowl until fluffy. stir together flour, oats, baking powder and salt. gradually add to butter, will be the consistency of coarse crumbs when fully mixed. stir in chips.
- 4 reserve 1 1/2 cups crumbs for topping. firmly press remaining mixture in the bottom of the pan.
- 5 bake 15 minutes or until set.
- 6 in medium saucepan, combine cranberries, corn syrup and water. until mixture boils. reduce heat; simmer 15 minutes. remove from heat. stir in vanilla. spread evenly over baked layer. sprinkle reserved crumbs on top. return to oven; bake for 15 to 20 minutes. cool completely. cut into 16 bars.
