Ingredients
- 3 cups flour
- 2/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter, softened
- 1 cup granulated sugar
- 1/2 cup firmly packed brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 60 miniature marshmallows
- granulated sugar, for rolling cookies
Recipe
- 1 preheat oven to 350°f.
- 2 in large bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside. in large mixer bowl, beat butter, the 1 cup granulated sugar, and brown sugar at medium speed until light and fluffy.
- 3 beat in eggs one at a time; add vanilla.
- 4 add flour mixture; beat at low speed until combined. cover and chill at least 1 hour.
- 5 shape one level tablespoon of dough around each marshmallow; seal edges. roll in granulated sugar.
- 6 place 2 inches apart on parchment-lined baking sheets. bake until cookies crack, about 6 to 8 minutes.
- 7 cool on baking sheet for 2 minutes; transfer to wire rack to cool completely.
- 8 store in airtight container.
