Oat Cake Cookies

Ingredients
- 6 cups quick oats
- 3 cups whole wheat flour
- 2 cups coconut
- 1 cup brown sugar
- 1 lb butter, softened
- 4 eggs
Recipe
- 1 mix together dry ingredients and run them through the food processor (you will likely need to do this in batches).
- 2 beat softened butter and eggs in a separate bowl.
- 3 add processed dry mixture to butter and eggs, mix well.
- 4 roll out the dough and cut with a cookie cutter or, alternatively, divide the dough and shape it into logs, refrigerate and cut slices.
- 5 **note: the dough should be just moist enough to hold together. if it won't, add water until it does.
- 6 bake at 350 degrees for 10-15 minutes (depending on thickness) or until the top of the cookie is firm to the touch.
