Oatmeal Chocolate Chunk Cookies

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 3/4 cup butter
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 1/2 cups flour
  • 4 ounces semisweet chocolate bars (ghirardelli)

Recipe

  • 1 preheat oven to 375°f.
  • 2 chop chocolate bar in food processor, pulsing until most of the chocolate pieces are approximately the size of store-bought chocolate chips. there will be some finer chocolate crumbs/powder and some larger bits, but this makes it even more delicious. set chocolate chunks aside.
  • 3 beat butter on medium-high speed for 30 seconds or until creamy.
  • 4 add sugars, baking powder, and baking soda and beat on medium-high speed for 30 seconds, scraping sides once to combine everything.
  • 5 add vanilla and eggs and beat well.
  • 6 stir in flour, scraping sides, until everything is incorporated.
  • 7 stir in oats until well combined.
  • 8 stir in chocolate chunks.
  • 9 drop rounded tablespoons of dough onto cookie sheet and bake 8-10 minutes.
