Lemon Graham Squares

Ingredients

  • Servings: 9
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup butter, melted
  • 3 large eggs, seperated
  • 1/2 cup flour
  • 3/4 cup sugar
  • 3 tablespoons cold water
  • juice of one lemon
  • 1 pinch salt
  • 1 tablespoon sugar

Recipe

  • 1 mix graham cracker crumbs, first amouint of sugar and butter. press into 9x9 baking dish, reserving 1 tbsp of crumb mixture. bake at 350 f for 8-10 minutes.
  • 2 cook lightly beaten egg yolks, flour, second amount of sugar, water, lemon juice and salt, until thickened. don't over-thicken as the mixture will become too globby. spread over crumbs.
  • 3 beat egg whites and third amount of sugar. when stiff, spread over lemon filling and sprinkle with reserved crumbs. lightly brown in oven.
