Oatmeal Peanut Butter Cookies

Ingredients
- 1/2 cup shortening
- 1/2 cup butter, softened
- 1 cup brown sugar, packed
- 3/4 cup sugar
- 1/2 cup creamy peanut butter
- 1/2 cup crunchy peanut butter
- 1 teaspoon vanilla extract
- 2 eggs
- 1 1/2 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 1/4 cups quick-cooking oats
Recipe
- 1 preheat oven to 375 degrees.
- 2 in a large bowl, cream together shortening, butter, brown sugar, sugar, peanut butters and vanilla until smooth.
- 3 beat in the eggs until well blended.
- 4 in another bowl, combine the flour, baking soda, and salt; stir into the creamed mixture.
- 5 mix in the oats until just combined.
- 6 drop by tablespoonfuls onto ungreased cookie sheets.
- 7 bake for 8-10 minutes, or until just light brown.
- 8 cool and store in an airtight container.
