Pineapple-butterscotch Bars

Ingredients
- 2 cups flour
- 3/4 teaspoon baking powder
- 3/4 teaspoon salt
- 1/3 cup shortening
- 2/3 cup dark brown sugar, firmly packed
- 1/2 teaspoon vanilla
- 2 large eggs
- 1 cup drained canned pineapple, crushed
- 8 ounces butterscotch chips
Recipe
- 1 cream shortening and sugar; add eggs and vanilla, beat well.
- 2 combine all dry ingredients and sift.
- 3 add dry ingredients to creamed mixture.
- 4 stir in crushed pineapple.
- 5 add butterscotch, and fold in .
- 6 spread into greased 13 x 9" pan.
- 7 bake at 350°f for 30-40 minutes or until golden-brown (test using toothpick; bars are ready when toothpick comes out clean).
