Pineapple-butterscotch Bars

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • 2 cups flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/3 cup shortening
  • 2/3 cup dark brown sugar, firmly packed
  • 1/2 teaspoon vanilla
  • 2 large eggs
  • 1 cup drained canned pineapple, crushed
  • 8 ounces butterscotch chips

Recipe

  • 1 cream shortening and sugar; add eggs and vanilla, beat well.
  • 2 combine all dry ingredients and sift.
  • 3 add dry ingredients to creamed mixture.
  • 4 stir in crushed pineapple.
  • 5 add butterscotch, and fold in .
  • 6 spread into greased 13 x 9" pan.
  • 7 bake at 350°f for 30-40 minutes or until golden-brown (test using toothpick; bars are ready when toothpick comes out clean).
