Peppermint Candy Cane Cookies

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 cup butter or 1 cup margarine, soften
  • 1 cup sugar or 1 cup sugar substitute
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 2 teaspoons baking powder
  • 2 3/4 cups flour
  • 1 cup candy cane, crushed

Recipe

  • 1 cream together the butter and sugar.
  • 2 add the egg and both of the extracts.
  • 3 mix all dry ingredients and add slowly to butter cream mixture until incorporated.
  • 4 fold in crushed candy canes.
  • 5 roll into teaspoons size small balls (or any shape you desire).
  • 6 bake at 375°f for 7- 10 minutes.
  • 7 should be light in color with light browning on the edges.
  • 8 let cool for a few minutes.
  • 9 note: some of the cookies will have a small pool of harden candy around the cookie. carefully peel that off with the cookie and enjoy.
