Lemon Sugar Cookies

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 5 tablespoons margarine
  • 1/3 cup sugar
  • 1 teaspoon lemon peel
  • 2 drops yellow food coloring (optional)
  • 1/4 cup lemon juice
  • 2 tablespoons sugar (optional)

Recipe

  • 1 preheat oven to 350°f.
  • 2 spray 2 non-stick cookie sheets with cooking spray, set aside.
  • 3 in a small bowl, combine flour and baking powder.
  • 4 in a med bowl, using an electric mixer, cream margarine and 1/3 cup of sugar until light and fluffy.
  • 5 beat in lemon peel and food coloring.
  • 6 alternately beat in flour mixture and lemon juice until well blended.
  • 7 shape dough into 1in balls and roll in 2 tbs sugar (if using).
  • 8 place 2in apart on prepared baking sheets.
  • 9 using the tines of a fork, press a crisscross pattern into each cookie.
  • 10 bake until edges are lightly golden, about 10 minutes.
  • 11 transfer cookies to a wire rack to cool completely.
