Maple Peanut Butter Cookies

Ingredients

  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup butter or 1/2 cup margarine or 1/2 cup shortening, softened
  • 1/2 cup peanut butter (crunchy or creamy, your pick)
  • 1/2 cup maple syrup
  • 1 large egg yolk
  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • sugar

Recipe

  • 1 preheat oven to 350°f.
  • 2 in a large bowl, beat brown sugar, butter and peanut butter until light and fluffy.
  • 3 add syrup and the egg yolk and beat well.
  • 4 mix in flour, baking soda, salt and baking powder.
  • 5 if necessary, refrigerate for 15-30 minutes for easier handling.
  • 6 shape dough into 1" balls and place 2 inches apart on ungreased cookie sheets.
  • 7 with a fork dipped in sugar, flatten balls with a criss-cross pattern.
  • 8 bake at 350° for 8-12 minutes until golden brown.
