Raw Lemon Cookies/macaroons

Total Time: 12 hrs 10 mins Preparation Time: 10 mins Cook Time: 12 hrs

Ingredients

  • 2 cups almonds, soaked for 4 hours
  • 2 lemons, zest of
  • 1 cup fresh lemon juice
  • 2 1/4 cups dry shredded coconut
  • 2/3 cup agave
  • 1/2 teaspoon salt

Recipe

  • 1 process almonds in food processor until they are ground fine.
  • 2 add in the lemon juice, lemon zest, salt and agave and process until it is pasty.
  • 3 add in coconut and process until combined (you may ned to mix it in by hand).
  • 4 place 1 tablespoon cookie dollops on a dehydrator sheet, and flatten slightly with your palm.
  • 5 dehydrate for approximately 12 hours at 105f (could also dehydrate at 115f for 8-10 hours with similar result).
