Jam Thumbprints

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 36
  • 3/4 cup butter
  • 1/2 cup sugar
  • 2 eggs, separated
  • 1 teaspoon vanilla
  • 1 1/2 cups all-purpose flour
  • 3/4 cup finely chopped pecans
  • 1/3 cup strawberry preserves
  • 1/2 teaspoon salt

Recipe

  • 1 cream butter and sugar til fluffy (if you have a strong mixer you may start with softened butter).
  • 2 add egg yolks, vanilla and salt and beat well.
  • 3 gradually add flour and mix thoroughly.
  • 4 lightly beat egg whites in a separate bowl (do not add in).
  • 5 roll your dough into 3/4 inch balls and dip in egg whites and roll in your pecans.
  • 6 place 1" apart on greased cookie sheet and mash down the centers with your thumbs.
  • 7 bake at 350 degrees for 15 minutes (my oven it's just a little more).
  • 8 cool slightly and just before serving fill centers with preserves.
