Lavender Cheesecake Squares

Ingredients

  • 1/3 cup butter or 1/3 cup margarine
  • 1/3 cup light brown sugar, packed
  • 1 cup unbleached flour
  • 1/2 cup pecans, finely chopped
  • 1 tablespoon dried lavender
  • 1/3 cup sugar
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon pure vanilla extract
  • 8 ounces cream cheese, softened at room temperature
  • fresh lavender

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 crust: butter an 8" square baking dish.
  • 3 in a bowl cream the butter and brown sugar together. stir in the flour, pecans and lavender.
  • 4 *reserve* 1 cup of the crust mixture. press the remaining mixture into the baking dish. bake for 15 minutes.
  • 5 filling: while the crust bakes, prepare the filling by beating together the sugar and cream cheese. next beat in the egg, milk, lemon juice and vanilla extract until smooth.
  • 6 pour the filling into the baked crust then sprinkle evenly with the reserved crust topping.
  • 7 bake 25 minutes. remove from rack and cool 10 minutes. to serve, cut into squares and place on cake platter. garnish with fresh lavender sprigs if desired.
  • 8 keep stored in refrigerator; covered well.
