Ginger Cookies (no Gluten, No Sugar)

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 55 g butter
  • 2 tablespoons molasses
  • 2 tablespoons honey
  • 115 g arrowroot
  • 1/2 teaspoon baking soda
  • 1/2-1 teaspoon mixed spice
  • 1 teaspoon ginger

Recipe

  • 1 melt the butter, honey and molasses in a medium saucepan.
  • 2 remove from heat and stir in the remaining ingredients.
  • 3 allow to stand. if after 5-10 minutes it's not a bit of a firm dough, you might add a bit more arrowroot.
  • 4 roll into small balls and bake for 10-15 minutes at 170°c/350°f.
