Light Lemon Bars

Ingredients

- 1 cup flour
- 1/4 cup powdered sugar
- 3 ounces low-fat cream cheese
- 1 tablespoon vegetable oil
- 2 large eggs
- 1/2 cup sugar
- 1 1/2 tablespoons grated fresh lemon zest
- 2 tablespoons flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup fresh lemon juice
Recipe
- 1 preheat oven to 350°.
- 2 in large bowl, stir together flour and powdered sugar.
- 3 using a pasty cutter, cut in cream cheese and oil until crumbly.
- 4 press mixture into bottom of an 8-inch square baking pan.
- 5 bake 20 minutes or until light golden in color.
- 6 in a mixing bowl, beat eggs with sugar and lemon peel until smooth.
- 7 whisk in flour, baking powder, salt, and finally lemon juice.
- 8 pour into the hot crust and bake 20 minutes, or until the top is golden brown and set.
