Lemon Lime Bars

Ingredients
- 1 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 4 extra-large eggs, room temperature
- 1 2/3 cups granulated sugar
- 1 tablespoon grated lemon zest (1-2 lemons)
- 1/2 tablespoon grated lime zest (1-2 limes)
- 2/3 cup freshly squeezed lemon juice
- 2/3 cup all-purpose flour
Recipe
- 1 line a 9x13 pan with foil, leaving an overhang around the edges. spray the foil.
- 2 prepare the crust: cream the butter and sugar until light. combine the flour and salt. add to the butter mixture until just mixed. dump onto a well-floured board and gather into a ball. flatten the dough and press it into the prepared pan, covering the bottom and a 1/2-inch edge on all sides. chill for 30 minutes.
- 3 preheat oven to 350°f bake the crust for 15-20 minutes, until very lightly browned. allow to cool on a wire rack, leaving the oven on.
- 4 prepare the filling: whisk together the eggs, sugar, zests, juice, and flour. pour into the crust and bake for 20-25 minutes, until the filling is set. let cool to room temperature.
