Phyllis Bailey's Raisin Cookies

Ingredients

  • 1 egg
  • 1/2 cup milk
  • 1 cup sugar
  • 1/2 cup butter
  • 1 teaspoon baking soda
  • 3 1/2 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1 (13 -15 ounce) box raisins
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 teaspoon flour

Recipe

  • 1 mix together the egg and the milk and blend this together with the rest of the cookie ingredients. chill the dough overnight.
  • 2 the next day: combine the raisins, sugar, water and flour in a saucepan and cook until thick. remove from heat and allow to cool.
  • 3 when ready to use the dough, roll out until about 1/8th inch thick.
  • 4 cut with 2 1/2 inch round cutter. place a teaspoon of the raisin mixture in the center of the circle and cover with another circle. press the edges together with a fork.
  • 5 bake at 425 degrees for 6-10 minutes.
